recognized as Celebes,
Sulawesi island is located west of Papua New Guinea in the Indonesian
Archipelago islands. This marvelous coffee is very similar to the Sumatrans. The
smooth full-body is a tad more acidity than Sumatra's. A touch of richness
makes this a well balanced mellow cup with sweet and syrupy tones. Dark roast
for a little extra body. Elegantly splendid!

Sulawesi Toraja White Eagle Out

Toraja is located right
on the equator in the central mountain district of Sulawesi. Of the two primary
gorwing areas on the island, Toraja is a specific area that is culturally
distinct from the rest of the island. Coffee grows wild there since the Dutch
were unable to subjugate the Toraja tribe. The coffee is grown on small-scale,
privately-owned farms at more than 3,290 feet above sea level. Most coffee
buyers are unaware of the differences in Toraja and Kalossi coffee and often
confuse the two. The "White Eagle" designation identifies this as being pure
Toraja coffee with no Kalossi coffees blended in. Toraja exhibits what many
consider the most ideal flavor profile of any single origin coffee. It is famous
for its rich, smooth, and full-bodied flavor, a pleasant and lively acidity, and
a delectable spicy aroma.
