Zambia is located on the Central African highlands.  This coffee shares some of the same characters as  Zimbabwe, the country where it is grown.  With a unique wild flavor, great balance, full body, mild acidity and an aftertaste of sweetness it keeps things interesting!  Harvest season is July through October for this wild one.  Zambia has a wide range of roast profiles. It is fun to experiment with the possibilities.  Take the roast just to a very few snaps into the second crack for a sweet, caramelly dark roast.  Don't let this one get away from you. Tame it at any roast!
